i actually think 275/40 will be a better option than 265/30 (or 35). it will definitely put the rolling diameter out but will help fill up these guards.
This is a great little calculator that tells you what effects various tyre sizes will have on your speedo reading etc.
For a standard 225/55R16 tyre, the best fit (ie. minimise speedo calibration differences) on a 19 inch rim is 245/35R19 but you can go plus/minus 2.5% so in a 19 inch rim with a 40 series tyre the best fit would be no larger than 235 but, of course, all these fits are subject to other factors eg. rim width and suspension setup.
I think a 255 or 265/40R19 would be an ideal fit keeping in mind the speedo. I drive by the GPS anyway as even the standard wheel/tyre combo is out about 3-5%. For example, 50 on the speedo is abot 45/46 on the GPS readout.

im running 275/35 r 19 on the back of mine i did have to role the gaurds a little and it sucks cause i cant get a wheel alinement cause the cars to low! _________________
stock gaurds
265 35 18 on 12 inch rear rim, the rims hang out the gaurds a little but not too noticable
235 35 18 on 11 inch front rim, same deal _________________

19x9.5 rears on my car, with a 245/35 tire stretched over it, it tucks under the guard with no worries, 15p offset though, which probably helps... not oo stretched either... but yeah you dont want tour misses to do any kerb hugging with this sorta setup.

hell yeah, with narrow rims liek that, you should have no trouble slamming it. thought that offset is a little bit too much IMHO, but otherwise it would be good to see some pics. Narrow tires too = easy skids... them tires arent gonna last long
